The Power to Heal (with Plants - No Oil)

People often ask me, “Why do you stick to a whole food, plant-based, no-oil way of eating?” Especially now, when TikTok trends are telling everyone to chug olive oil like it’s liquid gold!
Well, here’s the truth: even so-called “healthy” oils (yes, olive oil too!) can actually harm the delicate lining of our arteries. This inner lining, called the endothelium, is kind of a big deal—it’s what keeps our blood vessels strong, open, and functioning well. And since every single organ in our body depends on good blood flow for oxygen and nutrients, any damage to our arteries means our organs suffer too.
What most people don’t realize is that oils are highly processed, prone to oxidation (aka going rancid), and stripped of many of their original nutrients. Not exactly the superfood they’re made out to be!
Now here’s the really exciting part: a whole food, plant-based no-oil lifestyle doesn’t just prevent disease—it can actually reverse it. While many studies focus on heart disease, I can tell you from personal experience: healing goes way beyond the heart. Since changing how I eat, I’ve said goodbye to kidney disease, body aches, IBS, and now my sluggish thyroid is finally coming back to life. And the longer I stick with it, the better I feel.
Healing begins when we give our bodies what they truly need—and remove the stuff they don’t.
Of course, I still miss that sizzle of oil in the pan sometimes. But I’ve found easy workarounds! For stovetop cooking, I use a splash (or two... or five) of veggie broth instead. When baking, I swap oil for applesauce, mashed bananas, or creamy avocado—and guess what? My muffins are still moist and delicious. For salads, I whip up my own oil-free dressings and keep them ready in the fridge. It’s easier than you think.
