INGREDIENTS
▢ 12 ounces shredded brussel sprouts
▢ 1/2 yellow onion, quartered and sliced
▢ 2 ounces mushrooms, coarsely chopped
▢ 1 Tbsp Taco Seasoning
▢ Vegetable broth for sauteing
▢ Corn tortillas
▢ 8 ounces frozen corn
▢ 1 jalapeno finely chopped
▢ 1 Tbsp lime juice
▢ 1/2 tsp salt
▢ Vegetable broth for sauteing
▢ 1 cup cilantro
▢ 1 cup parsley
▢ 1/2 cup vegetable broth
▢ 1/4 cup cashews
▢ 1 clove garlic
▢ 1/2 tsp salt
▢ 2 Tbsp lime juice
Optional Toppings: Avocado, sliced radish, scallions or chives
METHOD
1. Sauté the brussel sprouts, onions and mushrooms starting with 2 Tbsp vegetable broth and adding as needed. Sprinkle taco seasoning and sauté to your desired softness.
2. Sauté the corn and jalapeno in 1 Tbsp vegetable broth (add as needed). Add salt and lime juice. Let the corn “char” a bit on the bottom of the pan at times.
3. Add cilantro, parsley, vegetable broth, cashews, garlic, salt and lime juice to food processor and pulse until desired texture. Think Chimichurri.
4. Warm corn tortillas, start with brussel sprout mixture, then corn, then chimichurri and add any additional toppings for a wholesome treat.
