90% Rule Recipe (>25% fat content): Craving some cozy comfort food? Give my plant-based Lasagna a try! It’s a delicious twist on my classic recipe, perfected after testing various plant-based alternatives. Using hearty ingredients like plant-based meats and cheeses, it’s one of those indulgent dishes that keeps me satisfied without feeling off track. It fits seamlessly into my 90% healthy eating rule, and I love to enjoy it every few weeks. Serve it with a fresh, crisp salad and some garlic whole grain sourdough toast for a meal that's sure to impress—even your guests!
INGREDIENTS
▢ Sunshine Saucy Marinara (in Recipes Section)
▢ 2 lbs of plant-based ground meat (optional) I like Impossible light or Beyond brands.
▢ 1 pkg of whole wheat lasagna noodles. DeLallo Whole Wheat Lasagna Noodles for best flavor.
Cheese Mixture
▢ 16 oz dairy free ricotta (optional substitute: dairy free cottage cheese or creamed cheese)
▢ 1/2 cup dairy free parmesan cheese.
▢ 1 Tbsp parsley flakes
▢ 1 1/2 tsp salt
▢ 1 tsp oregano leaves
▢ 1/2 cup grated dairy free Parmesan
METHOD
Sauté plant-based ground meat in saucepan until cooked and tender. Add Sunshine Saucy Marinara. Simmer for 1 hour or until spaghetti sauce consistency.
Prepare one package of whole wheat lasagna noodles, drain and rinse so they don't stick. (I prefer the DeLallo Whole Wheat Lasagna Noodles for best flavor. They are precooked but I put them in boiling water for about 8 minutes to soften them and easier layering.)
Mix next 5 ingredients (cheese mixture).
Heat oven to 350 degrees. In 13 x 9 x 2 inch pan, begin layering with 1 cup of the meat sauce on the bottom, then a layer of noodles, a layer of cheese mixture, a layer of meat and repeat, ending with noodles and meat on top. Sprinkle with remaining two cheeses.
(This recipe can be made ahead and refrigerated. If refrigerated, add 15 minutes to cooking time.)
Bake uncovered in center of oven for 45 minutes.
