Saucy Sunshine Marinara

Marinara is the perfect base for spaghetti or pizza sauce, and it’s always a good idea to make a big batch to have on hand for quick, easy meals (easy peasy!). It freezes beautifully for up to 3 months, so you’re never far from a delicious homemade sauce. The best part? You can add anything you like and even puree it for your desired texture. In a hurry? Whole Foods 365 Fat Free Marinara is a great go to option when you need something fast!


INGREDIENTS

▢ 1 cup chopped onions

▢ 1 cup chopped mushrooms

▢ 2 cloves garlic, minced

▢ 1 cup diced red peppers

▢ 3 (15 ounce) cans diced tomatoes

▢ 2 Tbsp date or maple syrup

▢ 1 tsp sea salt

▢ 1 Tbsp dried basil leaves

▢ 1 Tbsp oregano flakes

▢ 2 Tbsp parsley flakes

▢ 1/4 tsp cayenne pepper


METHOD

1.Sautee onions, mushrooms, garlic and peppers in saute pan until tender. Put into blender or food processor and add diced tomatoes and date or maple syrup. Blend or puree to marinara consistency.

2. Add the last five ingredients (spices and salt) to the marinara and mix into sauce.

3. Pour sauce into a saucepan and simmer for 15 minutes or until desired consistency.
