Many years ago, I dabbled in veganism for about a year, believing that meant I was embracing a whole food plant-based lifestyle. Looking back, I realize I had it all wrong.
As a Registered Nurse, I thrive on scientific principles and evidence-based practices. So when my kidney labs took a turn for the worse over five years and I was diagnosed with Chronic Kidney Disease Stage III, I flipped into full-on research mode. I was terrified of what lay ahead—dialysis was not something I wanted to face. Despite making lifestyle changes, the progression continued, and I felt stuck.
Then, during my endless search for answers, I stumbled upon a YouTube video featuring a nationally recognized nephrologist. One line stood out: “A whole food plant-based diet has been helpful for some individuals.” That was it! My nephrologist gave me a nonchalant nod, saying, “You can try it if you want.” What did I have to lose, except for my kidney function?
I remembered an old favorite, Forks Over Knives, and rewatched it. If a diet could clear heart arteries, could it also heal my kidneys? And what about my ongoing GI issues? Could it help there too? After all, both systems are highly vascular! I’m excited to share my healing journey with you and guide anyone looking to transform their health in a world filled with processed foods and heavy meats.
Inspired, I purged my kitchen and splurged on $400 worth of vegan groceries—only to realize they weren’t truly whole food plant-based. After a week, I watched Engine 2, a film by the son of one of the original Forks Over Knives doctors, and learned I’d wasted my money! All the benefits I wanted hinged on embracing whole foods. So, I dove in again, determined to make it work.
This journey wasn’t easy, but with the support of Bri, who said, “I’ll do this with you,” I found my way. Just six weeks in, my first lab results showed normal kidney function for the first time in five years! Bri’s cholesterol and blood pressure were normal for the first time in a decade after 20 weeks.
