Thai Spice Blend
▢ 1 Tbsp Penzey’s Paprika
▢ 2 Tbsp Penzey’s onion powder
▢ 2 Tbsp Penzey’s garlic powder
▢ 1 Tbsp Penzey’s dried basil
▢ 1 Tbsp Penzey’s ground ginger
▢ 1/2 tsp Penzey’s ground coriander
▢ 1/8 tsp Penzey’s cayenne pepper
▢ 1/8 tsp Penzey’s black pepper
▢ 2 tsp Penzey’s dried lemon zest
▢ 2 tsp Penzey’s lemongrass
Soup
Ingredients:
▢ 1/2 cup thinly sliced scallions
▢ 2 Tbsp Thai Spice Blend
▢ 5 cups vegetable broth
▢ 1 cup sliced carrots or diced
â–¢ 4 oz brown rice noodles
â–¢ 1 cup snow peas, halved
▢ 1 cup broccoli florets
▢ 1 cup baby bok choy cut into 1-inch pieces
▢ 1 cup unsweetened, unflavored plant milk
▢ 3 Tbsp lime juice
▢ 1/8th tsp sea salt
▢ Fresh chopped basil to sprinkle on top
Method:
In a large soup pot, sauté scallions in 1/4 cup vegetable broth, add Thai Spice Blend for 2 minutes.
Add remainder of stock (if it’s too thick you can always add more later) and carrots.  Boil then simmer for 5 minutes. Â
Add uncooked rice noodles, snow peas, broccoli and bok choy.  Simmer 5 - 7 minutes until noodles are cooked and vegetables are al dente. Â
Add plant milk, heat to boiling.  Turn off stove, add lime juice and salt.  Serve with basil garnish.
Substitutions:  What do you have in your fridge?  Green beans, cauliflower, sprouts, red, green or orange peppers, onions, snap peas, cubed potatoes all make great alternatives to get this soup rolling.  Consider adding a chopped jalapeno or spicey pepper of your choice for more zing.
