INGREDIENTS
▢ 1 cup uncooked brown basmati rice
Sauce:
▢ 1/2 cup warm water
▢ 2 Tbsp Tamari
▢ 1 Tbsp soy sauce
▢ 1 clove garlic, minced
▢ 3 Tbsp peanut butter
▢ 1 tsp rice wine vinegar
▢ 1 tsp Shiracha sauce
Stir Fry:
▢ 1 red bell pepper, sliced in strips
▢ 1 cup snow peas
▢ 1 carrot, ribboned
▢ 1 stalk celery, ribboned
▢ 1 cup broccoli florets
▢ 1 small onion sliced
▢ 1 (14 oz) pkg of extra firm tofu, cut into 1 inch cubes
▢ Crushed roasted peanuts and chopped scallions for sprinkle on top
METHOD
1) Cook rice according to instructions.
2) Combine sauce ingredients in small bowl and whisk until well mixed.
3) Saute tofu cubes in vegetable broth and 1 Tbsp Tamari for 5 minutes.
4) Add the stir fry vegetables and saute until softened slightly, only 4 minutes. Add more vegetable broth if needed.
5) Pour in the mixed peanut sauce and stir 1 more minute. Vegetables should remain crisp. Top with crushed peanuts and scallions. Serve over rice.
6) Great substitutes: asparagus, sugar peas, edamame, zucchini, diced eggplant, bok choy, purple cabbage - you name it!
