INGREDIENTS
▢3/4 cup raw, unsalted cashews - soaked
▢ 2/3 cup water
▢ 3 Tbsp red wine vinegar
▢ 1 Tbsp lemon juice
▢ 1 tsp maple syrup
▢ 2 cloves garlic
▢ 1/4 tsp yellow mustard powder
▢ 1/4 tsp paprika
▢ 1 Tbsp Penzey Italian Herb Mix
▢ 1/2 tsp sea salt
▢ 1/4 tsp black pepper
After blending add and stir in:
▢ 1/2 tsp Penzey Italian Herb Mix
METHOD
1. Soak the cashews in warm water (cover all cashews) for 4 - 6 hours, drain and rinse.
2. Add all ingredients to a high-speed blender and blend until creamy. Add remaining Italian Herb Mix.
3. Refrigerate for at least one hour. If dressing thickens, you may use it as is or add a bit of water to desire.
